Chickpea Omelette

Who needs eggs when you've got chickpea flour? Hehe. Check out this awesome plant-based omelette recipe I make ALL the time, it's seriously good. It's super simple and quick! You can have this for breakfast, lunch, and dinner.


Why use chickpea flour? it's loaded with protein, fibre and micronutrients. Chickpea flour is a low-GI food that has a gradual effect on blood sugar. In some small studies, eating foods made with chickpea flour resulted in decreased blood sugar. Chickpeas provide ample amounts of polyphenols, many of which are potent antioxidants. All these benefits help to improve heart health.



Ingredients

  • 1/2 cup chickpea flour

  • 1/2 Tbsp olive oil

  • 1/2 Tbsp turmeric

  • Extra seasoning of choice to taste


Toppings:

To top your chickpea omelette, use any veges you have in the fridge and fry in a frypan together. Then place this on top on the omelette along with a dressing of choice. I would recommend hummus thinned with a little water. In the picture above I have used both hummus and vegan pesto and thinned them together with a little water.


Instructions:

  1. Combine all your ingredients in a small bowl. Add water and mix until you have a smooth pancake batter like consistency.

  2. If your consistency it is too thick, add more water or if it gets too runny then add a little bit more chickpea flour to reach a good consistency.

  3. Pour your batter into a pan. When the omelette has bubbles forming all over it, flip it to cook the other side.

  4. Once cooked, add all your toppings and your dressing!
